Jonty Edwards, 23, serves as the Manager.
He pursued studies in Wildlife Conservation and Ecology in England, eventually embarking on a research project in Costa Rica that turned into a lifelong commitment. Jonty’s journey through Latin America involved working with various NGOs and organizations dedicated to preserving ecosystems.
After connecting with John, the owner of Pitaya, during the 2023 whale migration in Baja, he realized the opportunity to join the team and create unforgettable experiences that showcase the wonders of the natural world.
Lupa is one of the dedicated Servers at Pitaya. During the day, he works in real estate, and in the evenings, he takes pleasure in serving the restaurant’s patrons. Lupa’s motivation extends beyond earning a wage; he genuinely appreciates the warm atmosphere and the sense of family within the team.
Cesar, the Mixologist at Pitaya, boasts over a decade of experience not only crafting exquisite cocktails but also as a free-diver. He actively participates in spearfishing, the most sustainable method of fishing, ensuring the freshest catch of the day for the restaurant, which currently features Mahi Mahi.
Aidan, who serves as both a waitress and a host, has recently completed an independent documentary on Northern Right Whales. Her journey took her from Canada to Florida, closely tracking their migration. She concluded her documentary adventure in Baja, where she now leads boat tours as an environmental educator and extends her hospitality as a host at the restaurant.
Wellness Retreat and a Beach Club: Coming Soon
Pitaya is currently in the process of creating a stunning boutique hotel right within the ranch’s premises. This enchanting retreat will feature a spacious and inviting swimming pool, a relaxing hot tub, and a comprehensive wellness and spa center.
